No New Year Resolution

It’s a happy new year. We’re still in the Texas panhandle for the holidays but we’ll be making our way back home tomorrow.

Today was the start of our Gluten Free January and we also took an opportunity to re-visit our new favorite place to eat, the Big Texan Steak Ranch. This time we got the top sirloin for two to share. The menu says it’s the most flavorful cut of meat and it did not disappoint. It was excellent.

I didn’t make any resolutions for 2011. We’ve been doing so well for the last 5 or 6 months that I think we’ll just stick to keeping up with what we’re doing now.

Recipe: Primal Strawberry Banana Smoothie



Euro-Pro Ninja Master Prep Blender

Up until this Christmas, we had a pretty old Kitchen-Aid blender that’s sole job was making our smoothies that we sometimes drink for breakfast.

The jar itself had to be broken down into 5 parts (along with gaskets)  for cleaning. “Ease of Use” was apparently a foreign concept to Kitchen-Aid blender designers. In addition, the rubber gear that powers the blades had been stripped twice forcing me to order a new one (approximately $4.95 + shipping if I remember right) online.

Today was the first time we tried making them using our new Ninja Master Blender that we received for Christmas.

Ingredients:

1 Banana
1 C. Spinach
1/2 C. Frozen Strawberries
1/2 C. Frozen Mango
1/2 C. Coconut Milk

Preparation:

Bananas in a PWO Shake1) In any delicious breakfast shake recipe, we start out with adding the Bananas. In my pictures I’ve doubled the recipe because I was making two servings for me and Amanda. If you’re just making a single serving (16oz), you’ll want to follow the ingredients list above.

Chunks of Frozen Mango in a Shake2) Next, add the Spinach. You’ll want approximately a cup of spinach per serving.

Some people might be a little thrown off by adding spinach to a breakfast shake — don’t be. The banana will masks the flavor of the spinach and you’ll end up with a delicious, fruity-tasting drink with all the vitamins, minerals and micronutrients that spinach provides.

3) Add the Frozen Strawberries and Frozen Mango chunks. You can absolutely use fresh fruit for this step, but it’s easy to source frozen mango and strawberries with no added ingredients any time of the year.

Creamy Strawberry Breakfast Shake4) Pour in the half cup of Coconut Milk. The coconut milk (along with the bananas to an extent) are what is going to give the shake a rich, creamy texture. I use full fat coconut milk. Light coconut milk may also work, but it has more of a watery consistency, and so the shake may not be as thick.

5) Pulse the Ninja Master Blender. This does two things, first it preserves the life of your motor by keeping the heat building up to a minimum; and secondly, any large pieces of fruit that are hanging out between the blades have a chance to fall and get sliced by the other blades.

6) Serve and enjoy.

Primal Christmas Gifts

This Christmas we got the classical gifts like sweaters and underwear, but also got some pretty awesome food-related gifts that I thought would be neat to post about here.

Mark Sisson's The Primal Blueprint in HardcoverAmanda received Mark Sisson’s The Primal Blueprint and The Primal Blueprint Cookbook as gifts from her mom.

We’ve been following Mark’s site for a long time, but with the sheer amount and quality of content he posts on his website, I didn’t think we needed his book.

I was admittedly wrong. I’m only 4 chapters in and am already in awe of the book. It’s more than just a summarization of blogs posts (which is what I initially thought it would be).

It’s given me new insight and perspective into the primal diet and opened my eyes to a lot of things I otherwise might not have ever known.

I’ve skimmed over the Primal Blueprint Cookbook and there are a lot of high-quality recipes that look delicious. I can’t wait to get back home so we can try some of them out.

Food Saver Fresh Saver Handheld Vacuum SealerAnother cool food-related thing that we got for Christmas was the FoodSaver FreshSaver Handheld Vacuum Sealer.

We’ve wanted a vacuum sealer for a while, but didn’t want to get a big bulky unit for the once or twice a month we’d use it. We already have a ton of giant kitchen appliances we never use (like our juicer… or our food dehydrator…).

FreshSaver Sandwich and Snack Containers The FreshSaver is really the perfect size for us. It’s handheld so it’s small and stores well and it’s rechargeable so you don’t have to worry about replacing batteries.

We also received a set of FoodSaver MealSaver containers along with the vacuum packer.

The containers are Microwave, Dishwasher, and Freezer-safe and can be used with or without vacuum sealing them. They feel really sturdy and will likely end up replacing our extension collection of tupperware containers because of their wide variety of uses.

Last, but not least, we received a pretty cool blender and food processor.

Ninja Master Prep Food Processor and BlenderIt’s called the Euro-Pro Ninja Master Blender and Food Maker. It’s a bit different than other blenders I’ve seen because the motor actually resides in the lid.

Instead of spinning blades coming up from the base and the food falling onto the blades (and often getting stuck), there is a shaft that runs along the entire container from the top so the food blends evenly.

The lid detaches from the blender jar and fits on a smaller (but still quite large) food processor jar.

I like to make my own smoothies and flours, so this will no doubt be extremely handy to have.

Christmas Week Workout

Group Pushups

This week we’re on the road. Most of my workout this week will consist of bodyweight exercises and walking/sprinting.

Tuesday 12/21/10: 30 minutes of HIIT sprints.

Wednesday 12/22/10: Week 3, Day 1 of One Hundred Pushups. My workout schedule was really pushed back a couple days this week due to driving. This week of pushups started out really tough. I barely, and I mean barely, was able to eek out the last pushup in the final set. 72 pushups total. Still pretty awesome.

We’re at Amanda’s parent’s house and they have a TotalGym, which I’ve never used before. So I spent about 20 minutes on it today at the highest incline. It was okay. It seemed kind of like it was… not exactly cardio and also not exactly weight lifting. The maximum amount of weight I could lift (since it’s a percentage of your bodyweight) was 83lbs. That’s not exactly very heavy.

Saturday 12/25/10: Week 3, Day 2 of One Hundred Pushups. This workout got pushed back a day because I was just too sore to do it.

I lied about the TotalGym. It seems to have killed my arms and chest muscles. I was having a pretty good bout of DOMs yesterday because of the previous TotalGym workout on Wednesday. I attribute this to the new range of motion experienced with the TotalGym rather than the sheer weight required to peform the workout. In any case, I again managed to eek out my require pushups today for a total of 80 pushups.

I’ll try to pick up Day 3 tomorrow or on Monday.

Sunday 12/26/10: Week 3, Day 3 of One Hundred Pushups. I followed this up on consecutive days to prevent my schedule from getting out of whack. It’s supposed to be a six week program and I’m going to try to finish it in six weeks. Even though I just did Day 2 yesterday, I felt plenty rested and managed to crank out all 91 pushups (3 more than required in the final set).

And with this workout, the One Hundred Pushups program is halfway over. I can already tell a huge difference in the amount of pushups I can do and how I feel afterwards.

Eating Out: Big Texan Steak Ranch

The Big Texan

Last night was Amanda’s father’s birthday. We’re still up in the Texas panhandle for the holidays, so we drove down to Amarillo to celebrate his birthday at the Big Texan Steak Ranch.

Anyone who has driven down the I-40 (Route 66) knows about the Big Texan steakhouse. There are billboards everywhere. It’s also been featured on countless television shows including Man vs. Food and King of the Hill.

The main selling point of the Big Texan steakhouse is the “Free 72-ounce Steak.” The basic premise is that if you are able to consume the 72oz steak as well as the sides, your meal is on the house and you join the ranks of approximately 8,000 (out of 48,000) who have attempted the challenge and succeeded.

This is the first time I’ve ever been to the Big Texan. I’ve always been curious to try it. I’ve driven by the billboards dozens of times (moving from California to Oklahoma to Nevada to Arkansas) but never have we stopped.

The Big Texan Steak Ranch is my new favorite place to eat.

Everything about eating there was awesome. The atmosphere was great, we were seated immediately, and the food was fantastic. These guys really know how to cook a steak.

Amanda and I both ordered medium rare palo duro cuts (10 ounce) of prime rib. For paleo sides they offer a garden salad, vegetable of the day, sauteed mushrooms, or peppered beefsteak tomatoes and red onions.

I asked the waiter what the vegetable of the day was and it was unfortunately green beans — so instead we both got the garden salad and the beefsteak tomatoes.

The garden salad came out just the way we like it. With no cheese and no croutons. We didn’t have to special order it like that; that’s just how they serve it here. It’s like the cooks read our minds. The waiter brought out a cart of olive oil and red wine vinegar and that, along with a dash of pepper, made what amounted to a perfect salad.

I can’t even tell you how great the steak was. Medium rare at the Big Texan means medium rare — a super tender, warm, red, center with the edges slightly more cooked and with a delicious, but not overpowering, dry rub. I’ve had a lot of steaks and nothing really compares to how great and tender this one was. We’re already planning on going back in a week before we head home.

The other side dish we ordered was the Beefsteak Tomatoes and Red Onions. In my head I was thinking this would be served as perhaps diced tomatoes and onions fried and served in a bowl. Instead, what arrived was a plate of giant beefsteak tomatoes lightly coated with pepper and some sliced red onions.

I love raw food, and any place that can serve tasty raw food is awesome in my books. The tomatoes were juicy and delicious. The red onions were a great way to change the taste on your palette between bites of tomatoes — they really made the tomatoes taste sweeter.

As I’m writing I’m trying to think of something to constructively criticize the Big Texan so I don’t sound like one big advertisement; but I honestly can’t think of anything. It was a perfect evening eating out and I don’t think I would have changed anything even if I could.

Get on Board with Gluten Free January

Gluten Free January

Why wait until New Years to make your resolutions for 2011? Commit to doing something today.

Amanda and I have been going at this paleo thing for about 5 months and the results have been nothing short of amazing. Had we procrastinated ’til New Years, it would be May before we’re at the point where we’re at today. The earlier you get started, the better off you’ll be, and the more awesome you will become.

We’ve been gluten-free for at least 4 of those months. As I’ve mentioned before, we ended up using the bread was remaining in our house. This really helped lessen the initial financial burden of the diet and made sense from an ethical standpoint.

This January we’ve signed up for Gluten Free January, which, at this point, is more just to show that we’re doing it, rather than presenting us with a new challenge. Gluten-free is easy. We’ve proven that. Keeping it going for another month will be a light stroll in the park.

So far it looks like Amanda and I are the only participants from Arkansas — not very surprised there.

A Very Venison Christmas

We brought about 3lbs of frozen venison with us to Texas that we harvested earlier this year before gun season closed.

There is a Christmas Modern Gun Hunt in Arkansas set for December 26th – 28th, but we’ll still be driving all around Texas and Oklahoma during it. Woe is me.

Fortunately, we have quite a bit of venison to last us into the new year, and got to enjoy some delicious meals during our Christmas vacation.

We made a double helping of Primal Venison Stew, which was quickly devoured. We also made some spicy pulled venison which will be turned into some delicious breakfasts over the next few days.

World’s Most Dangerous Foods

Dangerous Raw Milk

Travel and Leisure has posted the World’s Most Dangerous Foods.

Most of the food that made the list is consumed in very limited quantities and is dangerous because the natural poisons contained in the food were not removed due to ill-preparation.

They couldn’t help but taking a swipe at Raw Milk, a food which is responsible for less than 0 deaths per year.

And yet they failed to list the world’s top most dangerous food — bread — who is responsible for countless illnesses, diabetes, obesity, death, and is nothing more than a pox on the globe.

For Dessert: Paleo Sugar Cookies

Primal Sugar Cookies for Paleolithic Eaters

Delicious Little Men.

Amanda took a recipe out of The Food Lover’s Primal Palate book to make some primal sugar cookies.

First, let me say that the quality of the recipe was great. You can tell that Hayley and Bill know their stuff and have worked hard to nail down this recipe while maintaining the quality of ingredients.

The only substitutions Amanda made was that she used agave nectar in place of the yacon syrup and stevia in place of the coconut palm sugar due to ingredients on hand.

I wish we had taken better pictures, but unfortunately they didn’t last long enough.

We’re in Texas

Eating Paleo in Texas

Well we’ve made it to Texas. 10 hours of driving and didn’t go off our diet on the road once.

We ate a breakfast of ham and eggs to keep us full before we left, and then brought with us a few handfuls of almonds, cashews, and sunflower seeds which we snacked on on the way.  After we arrived we had a spinach green salad with rotisserie chicken.  We were probably well under our normal caloric intake for the day, which is fine, because we’re still trying to lose weight and we had a very sedentary day on the road.
